The Choir of the Muses is part of a vast collection of mosaics from the Roman villa of Torre de Palma, which paved the triclinium, the noble room of the house. The caption reads SCOPA ASPRA TESSELLAM LEDERE NOLI. VTERI FELIX, “Don't damage the mosaic with a broom that's too rough, good luck”, an appeal from the master mosaicists and the owner of the house to take care with such a beautiful and sensitive work. More than a thousand years later, on this very ground, we pay homage to all those who made this wine, for the care and affection they put into it, as the ancients did.
The grapes were harvested by hand and transported in small boxes to the winery where they were stored in a cold room at 3°C for 24 hours. They were then sorted and gently pressed. The must was decanted cold (10°C) and then fermented in a temperature-controlled cement tank. After fermentation, the wine was aged for 10 months in Italian amphorae.
Alcohol: 14%
