The Choir of the Muses is part of a vast collection of mosaics from the Roman villa of Torre de Palma, which paved the triclinium, the noble room of the house. The caption reads SCOPA ASPRA TESSELLAM LEDERE NOLI. VTERI FELIX, “Don't damage the mosaic with a broom that's too rough, good luck”, an appeal from the master mosaicists and the owner of the house to take care with such a beautiful and sensitive work. More than a thousand years later, on this same floor, we pay homage to all those who made this wine, for the care and affection they put into it, as the ancients did.
Manual harvesting of a blend of 95% Aragonez and 5% Antão Vaz. After destemming, the grapes are taken to marble presses where the alcoholic fermentation takes place and the traditional foot treading is carried out, followed by 10 months' ageing in amphorae.
